process soy, peanuts, tree nuts, wheat or dairy.
Ciranda’s chocolates are available as 56 and 70 percent chips,
wafers, chocolate and couveratures. Both companies offer single origin chocolate from Peru that is also certified kosher and can be fair
trade certified. Multiple Organics offers cocoa powder, chocolate
chips, wafers and couvertures in both alkalized and non-alkalized (
natural) forms and tests each lot of its gluten-free chocolates for gluten.
Other allergens can be tested for on a client-needs basis.
Another new decadent ingredient is Camino’s fair trade chocolate
couvertures which are proudly made from bean to bar by Naranjillo, a
fair trade certified cooperative of family farmers in Peru. This chocolate is available in 10 kg format (100x100g bars) in
the following varieties: semi-sweet (56 percent
cacao), bittersweet (71 percent cacao) and
unsweetened (100 percent cacao; available
through special order only). The Camino chocolate couverture is also certified kosher.

Peelz, the second innovation from
Flavor Producers, is a novel dry flavoring system for tea and herbal
blend bags. Using patent-pending
technology, Peelz is made from a natural and recognizable substrate—
dried peel particles. Particle size and
bulk density is optimized for tea and
herbal blends and customizable flavor
profiles are available.
A variety of vanillas have also been
introduced to the market this year by
Utilizing a proprietary certified organic carrier system, Natural Flavors/
Elan also recently developed a variety
of alcohol-free organic vanilla flavors.
These products can be made with fair
trade vanilla and can be used in dairy,
baked, beverage and a variety of other
applications.
And while not technically a “
flavor” in the food processing sense, soy-based tamari sauce is often used to
add a savory flavor to products. Many
current processing methods, however,
add wheat to the paste’s ingredients.
To offer an option for those with allergens, Wan Ja Shan now offers industrial sizes of its organic wheat-free
tamari, in addition to several other
gluten-free and lower sodium organic
sauces. Manufacturers and food service providers can choose from five-gallon pails or 55-gallon drums.
Tamari can be used in BBQ sauces,
salad dressings and marinades that require soy sauce.
Flavorings
Flavor Producers recently introduced two new
flavor lines, “Trü Brüz” and “Peelz,” both available
in certified organic. Trü Brüz incorporates a new type of flavoring system that results in an authentic brewed coffee, tea or cocoa flavor
which can be used in drinks and foods. The brewing parameters for
Trü Brüz are optimized for each material to extract the truest brewed
flavor possible. Trü Brüz are available in liquid, water soluble essence,
extract and flavor forms.
